Pumpkin Pie Ice Cream Bites
Fall (and everything pumpkin) is winding down as we gear up to the smells of gingerbread and peppermint candy canes. We are throwing a last tribute to the joy, abundance and spiced pumpkin everything that fall brings.
What better way to celebrate than with our Pumpkin Pie Ice Cream Bites. We often hear our Spiced Pumpkin Ice Cream tastes just like pumpkin pie without the crust… in this recipe we reconstruct it back into a mini pie bite!
Ingredients:
Udderly Ridiculous Spiced Pumpkin Ice Cream (While supplies last!)
Appetizer/Desert mini cups (these can be purchased unless you have the time to make them from scratch!)
Goat Dulce de leche (Goat’s Milk Caramel can be ordered from a Goat Farm in Quebec https://www.facebook.com/lesdouceurscaprines/ or you can substitute)
Gay Lea Coconut Whipping Cream (if you are lactose intolerant)
Instructions:
Decorate the plate (cinnamon sugar, caramel swirls or whatever you imagine!)
Put a layer of Dulce de leche on the bottom of a mini cup and plate
Put a small scoop of Udderly Ridiculous Spiced Pumpkin Ice Cream into the cup (I use a mini cookie scoop)
Top with whip cream and serve immediately
